From Laura Dolson, your Guide to Low Carb Diets
In the U.S., Independence Day (Fourth of July) is coming up. Traditional celebrations include fireworks, parades, and, of course, food! Whether or not you live in the U.S., we can all celebrate "independence from carbs" with these recipe and menu ideas. Happy Independence Day! Laura

Low-Carb Fourth of July
Between the potato salad, the hamburger buns, and the strawberry shortcake, you might think July 4th needs to be a carb fest, but there are lots of great traditional choices that are low in carbs, and others that can easily be made so. Here are some ideas to have a wonderful celebration without sending your blood sugar through the roof.

Caulflower
This is a really great substitute for potato salad - I've actually gotten requests to bring this to summer potlucks.

Low-Carb Strawberry Shortcake
I don't think any dessert says "Fourth of July" louder than strawberry shortcake. Yum!

Watermelon Salad with Cucumber and Mint
This salad is refreshing, delicious - and EASY! It's a surprisingly great combination of flavors.
