    I love the Fourth of July. I may be a Brit, but I celebrate America's Independence Day along with everybody else. My American-born children sport their Old Navy flag t-shirts with pride. They enjoy eating hot dogs, followed by patriotic cupcakes; then they wait impatiently for dusk to fall and the fireworks to begin.

    A Low Fat Fourth
    Keep fat in check this July 4th and prepare some lower-fat festive fare from turkey burgers to fish kebabs.

    Southwestern Shrimp
    The great thing about shrimp is that they're quick and easy to cook. The biggest mistake people make is to overcook them so that they turn out tough and rubbery. Enjoy this Southwestern Shrimp dish with a side dish of rice.

    Blueberry Sorbet
    Sorbet is a refreshing, low calorie, virtually fat free summertime treat. Blueberries make for a gorgeous, intensely purple sorbet. If, like me, you don't have an ice cream maker, the second stint in the blender or food processor improves the texture of the sorbet, to make it smoother.

    Broiled Salmon
    The American Heart Association recommends we eat fish at least twice a week. While salmon is obviously a "fatty" fish, the fats are the heart-healthy kind. Chock full of omega 3 fatty acids, which the body needs but can't manufacture, salmon should be included in all our diets, including low-fat ones.
