From Fiona Haynes, your Guide to Low Fat Cooking
Ideally we should eat fish two or three times a week, but few of us do. For some reason, cooking fish seems daunting, yet it really isn't. Most fish cooks quickly and easily; we're more likely to over cook it than under cook it. So this week, here are 10 straightforward fish and seafood recipes for you to try.

Poached Salmon with Yogurt Sauce
Poaching a is a terrific low fat way to cook. It works perfectly with chicken and equally well, if not better, with fish. Given that salmon has a relatively high fat content anyway (thanks to its heart-healthy omega-3s), finding a low-fat way to prepare it seems a sensible thing to do.

Fish Tacos
Normally fish tacos call for some kind of fried fish, which although delicious, is not the healthiest way to eat your fish. These fish tacos call for baked halibut or cod.

Breaded Fish
This kid-friendly fish recipe is so much lower in fat than the store-bought variety. Serves with oven fried russets or better still, sweet potato oven fries.

Cod with Lentils
Enjoy this rich and satisfying low-fat cod and lentils supper with some whole grain bread to mop up the juices. Feel free to substitute another white fish for the cod. Halibut is a good option, though quite expensive. Tilapia is a cheaper alternative.
