Which is better, graded or ungraded eggs?

Want to know why I buy all of my eggs from a small farm, a farm where their procedures and practices are no secret? Where their customers know exactly how the hens are treated and how the eggs are handled?

It's not just the egg recall earlier this year of 380 million eggs due to potential salmonella poisoning.

It's what's been uncovered in the wake of the recall.

Namely, the allegations that US Department of Agriculture graders noticed problems earlier this year but sat on the findings until the American Food and Drug Administration (FDA) took notice of the issues last month.

Way to go, guys!

Apparently, daily sanitation reports were filed by graders, and those reports went sour as early as April. Bugs, trash, egg residue, filthy equipment — you name it, it was noticed and recorded — but nothing was done about it.

The FDA later found maggots, mice, and piles of manure in the henhouses — as well as salmonella in the feed.

The government has defended the graders, noting they're not food safety inspectors. But surely, there's a responsibility to let someone know what you're seeing rather than look the other way, with the old "not my job" line as your only defence.

The eggs I buy are ungraded.

Some people might have a problem with that — but they might not know what grading is actually for.

It has nothing to do with the quality of the eggs, or the cleanliness of the facility in which they're produced. Nope — it's all about the egg's size and colour. So those grade As could have come from a bug-infested cesspool of a factory farm. As long as they're all the right size and colour, though, it doesn't seem to matter to the powers that be.

So, if you ask me, buying your eggs from a trusted source, whom you know are treating the hens properly and where you see the environment in which the eggs are laid are clean, is much more important than worrying about the size and colour...

Will bio-identical HRT give you facial hair?

Q: I am interested in trying bio-identical hormone replacement therapy for my hot flushes and other menopausal symptoms, but I am nervous to use testosterone. When I mentioned that it was a part of the programme to a friend of mine, she warned me that it could cause me to grow facial hair. I know it sounds vain, but I want to avoid that if possible. Do I really need the testosterone?

I know it may be boring to read this over and over, but I wouldn't repeat it so often if it wasn't so important: For the best — and safest — results in any therapy, it's absolutely crucial to copy Nature as closely as possible.

If you're replacing natural hormones, use bio-identical molecules in their natural patterns and relationships. And use physiologic quantities and physiologic timing. The doses of testosterone in most bio-identical hormone replacement protocols are meant to replicate what your body would naturally produce on its own, so the chances of the problems you mentioned occurring are very small. Of course, following these guidelines doesn't guarantee that there will never be problems, but it certainly minimizes the risk.
