My version of panna cotta (cooked cream) omits the cream! Instead, I use a blend of low fat buttermilk, fat-free half and half, and nonfat milk to make a light, silky and delicious dessert worthy of a special occasion. Also this week, super-easy strawberry jam, my favorite quinoa salad, and watermelon smoothies.

Low Fat Panna Cotta
Converting a rich creamy recipe like Panna Cotta into a low fat one obviously means making some compromises. Panna Cotta is usually made with cream, which accounts for its wonderfully rich, silky texture. But if you want a much lighter version, this very low fat panna cotta does the trick.

Easy Strawberry Freezer Jam
This is an easy recipe for strawberry freezer jam. It's naturally fat free, though the sugar content is relatively high. Even so, a tablespoon of jam is all you need to make your morning toast extra special.

Southwestern Quinoa Salad
This colorful southwestern quinoa salad makes a wonderful side dish for grilled lean pork or chicken. It also works as a lunch salad all by itself.

Watermelon Smoothie
Here's a cool, refreshing smoothie made with chunks of watermelon and nonfat Greek yogurt. You'll notice that this smoothie is somewhat thinner in consistency than other fruit smoothies, due to the high water content of watermelon. No matter, it's still a great drink for a hot summer's day.
