Roasting the vegetables adds a depth to the flavor, so don't be tempted to skip that part in favor of simply boiling and simmering. | Pumpkin Apple Muffins It's not hard to make a lower fat muffin because ingredients such as fruit purees or canned pumpkin make great fat substitutes. These low fat pumpkin apple muffins, which contain both canned pumpkin and applesauce, make a great snack or brunch item. | White Turkey Chili This white turkey chili makes a hearty, wholesome meal on a cold night.
