Ah, salad days! With warmer days ahead, even for those of us in the Pacific Northwest, we can look forward to lighter meals featuring all manner of salads. But first, what makes a good and healthy salad?

The Low Fat Salad
What could be healthier or more low fat than salad? Well, it depends what's in it and on it. In its basic state--a bed of salad leaves with chopped vegetables, it is indeed low fat and healthy. It's what is added to our salads that gets us into trouble.

Tuna, Bean and Couscous Salad
This low-fat tuna, bean and couscous salad makes a fast, healthy and nutritious supper. Serve chilled or at room temperature.

Chicken and Pasta Salad
Quick and easy to prepare, this low fat summer chicken and pasta salad makes a light yet filling lunch or supper on a warm evening. Enjoy with a chilled glass of wine.

Mediterranean Salad
Beans, artichokes, red peppers, and tomatoes on a bed of arugula make a great combination. To make a full meal out of this salad, top it with water-packed tuna or some cooked chicken skinless chicken breast.
