From Laura Dolson, your Guide to Low Carb Diets
I remember my sixth grade teacher reading us poems about fall - "The Frost is on the Pumpkin" and "October's Bright Blue Weather". Well, both are happening where I live - we got our first frost this morning, and this afternoon's weather is warm and clear. Of course, pumpkins are everywhere - at the market, in people's yards, and at the schools. Happily, pumpkins are great friend for low-carbers because they are packed with nutrients, but the carbs are lower than many other squashes. I like to keep a few cans around all year long for quick soups. Have a lovely fall weekend! Laura

This low-carb and gluten-free version of a traditional pumpkin roll (a rolled cake with a cream cheese filling) is a wonderful fall dessert.

How to Roast Pumpkin Seeds
The pumpkin carving ritual wouldn't be complete without the smells and crunching of roasted pumpkin seeds! This also works for any kind of squash seeds, including spaghetti squash.
