It seems to be a human trait that we tend not to plan for an emergency, but it's always a good idea to have some non-perishable low-carb food on hand for emergencies and power outages. Also, good and easy things to put together without cooking, and a new recipe for those not planning to be without power. Stay safe - Laura

Low-Carb Emergency Food
Having a stockpile of food and water is always a good idea, but when a hurricane is on the way, it's a necessity. It also comes in handy when illness strikes your household or when it's inconvenient to run to the store. Since granola bars won't work for us, here are lots of ideas of what you can have on hand.

New Recipe: Eggplant Involtini
This recipe reminds me of manicotti, as it has a ricotta cheese filling, which you roll the eggplant around. this is a simplified version of the more traditional involtini, as it requires no baking.

How to Make Low-Carb Trail Mix
Trail mix is nice to have in emergencies, as a little goes a long way.
