Olive oil is seldom on lists of super-foods, but after spending quite a bit of time researching it, this just may be the king of them all! I think it must be simple fat-phobia that keeps people away. I was simply blown away by the health benefits of olive oil. Did you know that it is one of the few foods definitively shown to have an anti-inflammatory effect in our bodies? It could easily fill several books (and has), but here's my synopsis of some of the important information about olive oil, including how to select, store, and use it.
