Good news in my area - after three years of severe limitations on salmon fishing due to falling numbers, the salmon are making a comeback. It seems we are learning from the carefully managed Alaskan fisheries. This is great, because wild salmon is simply one of the best things we can eat, both in terms of flavor and because it's so good for us! Laura
The tangy glaze is sweet and spicy, and works very well with the rich taste of salmon. I like it for grilled salmon, but it works for baked salmon as well. It's great with my ginger "guacamole", a super-simple side dish.
This cooking technique is something of a miracle. The fish bakes at a low heat right on the platter you will serve it on. No pans to wash! And you won't believe how flavorful and moist the fish is. This recipe works will almost any herb or spice combination you like.
