Valentine's Day candies have been in the store since, oh, the day after Christmas, so I don't think I'm being too premature in thinking ahead to Valentine's Day. If you would like to indulge in some lighter sweet treats, I have a few that might tempt you.
Made with egg whites, these mini angel food cakes are fat-free. Serve them with perhaps a little homemade lemon icing (made from powdered sugar and lemon juice), or as a luscious-looking dessert with strawberries and a little dark-chocolate syrup drizzled over.
Converting an indulgent recipe like Panna Cotta into a low fat one obviously means making a few adjustments. Panna Cotta is usually made with cream, which accounts for its delightfully silky texture. But if you want a lighter version, this very low fat panna cotta does the trick.
For a perfect fat-free Valentine's Day treat, try these light-as-air meringue cookies. For best results, separate the eggs while cold, making sure that not a trace of of yolk contaminates them. Leave the whites for 20 minutes or so before beating them. Make sure the whisks and bowl are clean and free from grease before use.
